Ingredients:
1 – 15 oz. container of light Alfredo sauce
½-cup milk
2-½ cups white cooked rice
2-cups cooked (cubed) chicken (seasoned – optional)
1-cup frozen sweet peas
1/3-cup bottled roasted sweet red bell peppers (chopped)
2-cups soft breadcrumbs
1-tablespoon butter
2-cups Cheddar and Monterey Jack Cheese
Note: Use salt and pepper for seasoning
Directions:
*Preheat oven to 350 degrees.
*Cook the Chicken (if not already) and the rice.
*In large bowl, mix all ingredients. (Except cheese)
*Pour mixture into a baking dish (I used a glass 11×8)
*Bake covered for 30 minutes.
*Uncover, sprinkle cheese on top and put back into the oven.
*When cheese is melted on top your casserole is done!
*Let cool and serve!
