This is my personal favorite dessert, this is a very easy to make cheesecake and does not require baking.
For the crust you’ll need:
- about 6 graham crackers
- 1/2 stick of butter
- 1/4 cup sugar
For the filling you’ll need:
- 1 package cream cheese
- 1 can sweetened condensed milk (see bottom for substitution if you do not have this)
- 1/3 cup lemon juice
- 1 tsp. vanilla
Directions:
1. First you will need to crush the graham crackers as finely as possible. You can do this fairly easily by placing them in a bread sack or Zip-loc bag and crushing them with a rolling pin. Mix the sugar with the graham cracker crumbs and drizzle with melted butter. Combine mixture and press into pie pan or 8X8 cake pan.
2. Put cream cheese in medium mixing bowl and whip with electric mixture until creamy. Add lemon juice vanilla and sweetened condensed milk. Mix for 2 minutes or until creamy. Dump the mixture on top of the crust and refrigerate. It should take a few hours to set up so remember to plan ahead. Then enjoy your fabulous cheesecake. This goes well with many different fruit toppings from cherry to strawberry.
Sweetened Condencsed Milk Substitution:
- 2 eggs
- 1 c. brown sugar
- 1 tsp. vanilla
- 2 tbsp. flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
